Here's a recipe that freezes well and can be popped into a container when you're on the go!
1 – cooking spray
5 large – eggs
1/8 teaspoon – salt
1/8 teaspoon – black pepper
1 medium – bell pepper, red, diced
3/4 cup – red onion, diced
1/4 cup – cheddar cheese, shredded
Spray a muffin tin with cooking spray and set aside. Preheat oven to 350°F
Whisk the eggs in a bowl. Season with salt and pepper.
Fill muffin tin equally with red bell pepper and red onion.
Top equally with egg mixture.
Add cheddar on top.
Bake for 20-25 minutes until centers are set and no longer runny.
