The Healing Effects of Bone Broth

I am a staunch believer that one needs to hear information in several forms until one is able to secure a life change.  Life changes are difficult as we aren't accustomed to the interference of switching our normal routines.  

Here is a wonderful article on bone broth from Dr. Mercola who makes his own bone broth from scratch.  If possible, stay away from the convenience of bone broth powders.  After all, the sheer delight of bringing back something as archaic as bone broth is worth the time invested.

According to an old South American proverb, "good broth will resurrect the dead." While that's undoubtedly an exaggeration, it speaks to the value placed on this wholesome food, going back through the annals of time.

The featured article by Dr. Amy Myers1 lists 10 health benefits of bone broth. Sally Fallon with the Weston A. Price Foundation has previously published information about this healing food as well.

First and foremost, homemade bone broth is excellent for speeding healing and recuperation from illness. You've undoubtedly heard the old adage that chicken soup will help cure a cold, and there's scientific support for such a statement.

For starters, chicken contains a natural amino acid called cysteine, which can thin the mucus in your lungs and make it less sticky so you can expel it more easily. Processed, canned soups will not work as well as the homemade version made from slow-cooked bone broth.

For best results, you really need to make up a fresh batch yourself (or ask a friend or family member to do so). If combating a cold, make the soup hot and spicy with plenty of pepper. The spices will trigger a sudden release of watery fluids in your mouth, throat, and lungs, which will help thin down the respiratory mucus so it's easier to expel.

But the benefits of broth don't end there. As explained by Sally Fallon: "Stock contains minerals in a form the body can absorb easily—not just calcium but also magnesium, phosphorus, silicon, sulfur and trace minerals. It contains the broken down material from cartilage and tendons--stuff like chondroitin sulphates and glucosamine, now sold as expensive supplements for arthritis and joint pain."

The Healing Influence of Broth on Your GutIn later years, medical scientists have discovered that your health is in large part dependent on the health of your intestinal tract. Many of our modern diseases appear to be rooted in an unbalanced mix of microorganisms in your digestive system, courtesy of an inappropriate and unbalanced diet that is too high in sugars and too low in healthful fats and beneficial bacteria.

The Healing Benefits of Bone BrothAs the featured article states, there are many reasons for incorporating good-old-fashioned bone broth into your diet. The following health benefits attest to its status as "good medicine."

Helps heal and seal your gut, and promotes healthy digestion: The gelatin found in bone broth is a hydrophilic colloid. It attracts and holds liquids, including digestive juices, thereby supporting proper digestion

Inhibits infection caused by cold and flu viruses, etc.: A study published over a decade ago found that chicken soup indeed has medicinal qualities, significantly mitigating infection

Reduces joint pain and inflammation, courtesy of chondroitin sulphates, glucosamine, and other compounds extracted from the boiled down cartilage

Fights inflammation: Amino acids such as glycine, proline, and arginine all have anti-inflammatory effects. Arginine, for example, has been found to be particularly beneficial for the treatment of sepsis (whole-body inflammation).

Making your own bone broth is extremely cost effective, as you can make use of left over carcass bones that would otherwise be thrown away. And while the thought of making your own broth may seem intimidating at first, it's actually quite easy. It can also save you money by reducing your need for dietary supplements. As mentioned above, bone broth provides you with a variety of important nutrients—such as calcium, magnesium, chondroitin, glucosamine, and arginine—that you may otherwise be spending a good deal of money on in the form of supplements.

Easy Chicken Broth Recipe

Both featured articles include a sample recipe for homemade chicken broth. The following recipe was provided by Sally Fallon, writing for the Weston A. Price Foundation.6 Her article also contains a recipe for beef and fish broth. (You could also use turkey, duck, or lamb, following the same basic directions.) Perhaps the most important caveat when making broth, whether you're using chicken or beef, is to make sure they're from organically-raised, pastured or grass-fed animals. As noted by Fallon, chickens raised in confined animal feeding operations (CAFOs) tend to produce stock that doesn't gel, and this gelatin has long been valued for its therapeutic properties. As explained by Fallon:

"Gelatin was universally acclaimed as a most nutritious foodstuff particularly by the French, who were seeking ways to feed their armies and vast numbers of homeless in Paris and other cities. Although gelatin is not a complete protein, containing only the amino acids arginine and glycine in large amounts, it acts as a protein sparer, helping the poor stretch a few morsels of meat into a complete meal."

Besides that, CAFO animals are fed an unnatural diet that is not beneficial for their intestinal makeup, and they're also given a variety of veterinary drugs and growth promoters. You don't want any of these potentially harmful additives in your broth, so make sure to start off with an organically-raised product.
Ingredients for homemade chicken broth..

Chicken Bone Broth 

1 whole free-range chicken or 2 to 3 pounds of bony chicken parts, such as necks, backs, breastbones, and wings
Gizzards from one chicken (optional)
2-4 chicken feet (optional)
4 quarts cold filtered water
2 tablespoons vinegar
1 large onion, coarsely chopped
2 carrots, peeled and coarsely chopped
3 celery stalks, coarsely chopped
1 bunch parsley

Please note the addition of vinegar. Not only are fats are ideally combined with acids like vinegar, but when it comes to making broth, the vinegar helps leech all those valuable minerals from the bones into the stockpot water, which is ultimately what you'll be eating. The goal is to extract as many minerals as possible out of the bones into the broth water. Bragg's raw apple cider vinegar is a good choice as it's unfiltered and unpasteurized.

Cooking Directions

There are lots of different ways to make bone broth, and there really isn't a wrong way. You can find different variations online. Here, I'll offer some basic directions. If you're starting out with a whole chicken, you'll of course have plenty of meat as well, which can be added back into the broth later with extra herbs and spices to make a chicken soup. I also use it on my salad.
  1. Fill up a large stockpot (or large crockpot) with pure, filtered water. (A crockpot is recommended for safety reasons if you have to leave home while it's cooking.)
  2. Add vinegar and all vegetables except parsley to the water.
  3. Place the whole chicken or chicken carcass into the pot.
  4. Bring to a boil, and remove any scum that rises to the top.
  5. Reduce the heat to the lowest setting and let simmer.
  6. If cooking a whole chicken, the meat should start separating from the bone after about 2 hours. Simply remove the chicken from the pot and separate the meat from the bones. Place the carcass back into the pot and continue simmering the bones for another 12-24 hours and follow with step 8 and 9.
  7. If cooking bones only, simply let them simmer for about 24 hours.
  8. Fallon suggests adding the fresh parsley about 10 minutes before finishing the stock, as this will add healthy mineral ions to your broth.
  9. Remove remaining bones from the broth with a slotted spoon and strain the rest through a strainer to remove any bone fragments.
Bone Broth—A Medicinal 'Soul Food'Simmering bones over low heat for an entire day will create one of the most nutritious and healing foods there is. You can use this broth for soups, stews, or drink it straight. The broth can also be frozen for future use. Keep in mind that the "skin" that forms on the top is the best part. It contains valuable nutrients, such as sulfur, along with healthful fats, so just stir it back into the broth.

Bone broth used to be a dietary staple, as were fermented foods, and the elimination of these foods from our modern diet is largely to blame for our increasingly poor health, and the need for dietary supplements.

Both broth and fermented foods, such as fermented veggies, are simple and inexpensive to make at home, and both also allow you to make use of a wide variety of leftovers. When you add all the benefits together, it's hard to imagine a food that will give you more bang for your buck.. -Dr. Mercola

Nutrition researchers Sally Fallon and Kaayla Daniel of the Weston A. Price Foundation explain that bone broths contain minerals in forms that your body can easily absorb: calcium, magnesium, phosphorus, silicon, sulphur and others. They contain chondroitin sulfate and glucosamine, the compounds sold as pricey supplements to reduce inflammation, arthritis and joint pain. A study of chicken soup (broth) conducted by the University of Nebraska Medical Center wondered what it was in the soup that made it so beneficial for colds and flu. Researchers found that the amino acids that were produced when making chicken stock reduced inflammation in the respiratory system and improved digestion. Also, research is proving it can also boost the immune system and heal disorders like allergies, asthma and arthritis. (2)

Fallon explains that most store-bought “stock and “broth” today aren’t “REAL.” Instead, companies use lab-produced meat flavors in bouillon cubes, soup and sauce mixes. Also, manufacturers began using monosodium glutamate (MSG), which is recognized as a meat flavor but in reality is a neurotoxin.

If you want real bone broth and real bone broth benefits, you can make it yourself at home, which I explain at the end of this article. You need to get grass-fed bones from your local farmers market or from a online health food store like Wise Choice Market.

Bone broth is a great place to find all of the valuable amino acids, collagen, gelatin and trace minerals. In fact, there are dozens of different nutrients found within bone broth, many of which can’t be obtained easily from other commonly eaten foods. That’s partly why there are so many incredible bone broth benefits.

By regularly drinking bone broth or using it in recipes, you can help promote healthy gut integrity while reducing  permeability and inflammation. Here are the six major bone broth benefits.

1. Protects Joints
Bone broth is one of world’s best sources of natural collagen, the protein found in vertebrae animals — in their bones, skin, cartilage, ligaments, tendons and bone marrow. As we get older, our joints naturally experience wear and tear, and we become less flexible.

Why does that matter? As we age, cartilage diminishes as it gets attacked by antibodies (age-related degradation of joint cartilage). As bone broth simmers, collagen from the animal parts leaches into the broth and becomes readily absorbable to help restore cartilage.

How to Make Bone Broth
There are a few important basics to consider when making good stock. You can make bone broth with animal components alone, but in his chicken soup study, Dr. Rennard found that the combination of animal products and vegetables seemed to have synergistic effects, working together to be more beneficial than either alone.

  4. Place crock pot on low setting.
  5. Cook slow and at low heat.  A low and slow cook time is necessary in order to fully extract the nutrients in and around the bone.
  6. You may also use chicken bones for a great chicken-based soup.
After cooking, the broth will cool and a layer of fat will harden on top. This layer protects the broth beneath.

Discard this layer only when you are about to eat the broth.

10 Foods that Trigger Pancreatitis

Pancreatitis is a very painful ailment that can cause hospitalization and many days off of work. While for some, the illness is unavoidable, most patients can curb their attacks by being super careful about what they eat. When it comes down to eating a donut while rushing in the morning, or suffering the whole day with a pancreas attack- the choice is pretty simple. Always steer clear of foods that can trigger an attack or make your condition worsen.


1. Red Sauces

That spaghetti recipe your grandmother made that you adore- sadly that may have to come to a halt if you suffer from pancreatitis. Sauces such as marinara or a thick Bolognese may be your worst nightmare. Water them down or use very small portions if you need to, I find that using low fat butter or a white sauce isn’t as harsh on my pancreas.

2. Sugar

It’s quite a challenge to find foods that do not contain sugar, especially if you eat a lot on the run. Processed foods contain a ton of sugar, as well as juices, coffees, and even pasta sauces. They increase your triglycerides and make life difficult for the pancreas, which is exactly what you don’t want!

3. Fattening Meats

There aren’t many people that don’t like bacon and other meaty treats, but the fact of the matter is they are not easily processed by the pancreas. Avoid them for a number of reasons, aside from being problematic for the pancreas- they are also bad for your cholesterol levels and blood pressure.

4. Whole Milk

A lot of folks prefer the taste of whole milk over milk that is less fattening, the issue is the fat in whole milk when it gets to the pancreas. It becomes a process for the body to decompose when living with pancreatitis. Use low fat milks, and be cautious of other dairy products with high fat such a yogurts and cheeses.

5. Prepackaged Foods

If you grab anything to eat in a hurry from a local fuel station, odds are it isn’t good for your pancreas. Foods that have been prepared, frozen or compartmentalized for storing for months (frozen dinners, snack bars, candies, donuts, muffins) can easy annoy the pancreas. Look for healthier alternatives if you must choose your meal options from a shop in a hurry.

6. Snacks

Brownies, chips, nachos, pretzels, ice cream, nuts, and pretty much any other snack food you can imagine that has been premade in a package is not ideal for pancreatitis patients. Snacking doesn’t have to be an impossible feat though, just plan ahead for the week and make small snack bag servings of fruits, vegetables, and healthier alternatives.

7. Spicy Foods

Most gastrointestinal providers will ask you to avoid spicy foods of all types because they tend to work up the pancreas and can send you straight to the emergency room. Personally, I avoid them entirely and never eat them because I know they give me attacks within 30 minutes. If I have eaten something spicy by accident I immediately flush it out with water.

8. White Flour

Most yummy treats are constructed with white flour as a base ingredient. Breads, cereals, pastas and so forth are all usually made with it, but you can find some substitutes for most of them that are made with wheat instead to avoid any pancreatic issues. Whole wheat pastas for example are making a ton of fans, and are inexpensive to try.

9. Chinese Food

Millions of people across the globe adore their Chinese meals, but they can be a struggle for the pancreas to digest peacefully. They can be loaded with fat, grease, and spices that your body just shouldn’t be eating. I always suggest if you have to eat these meal choices, to drink lots of water to help balance out the work that the pancreas needs to do and start the flushing process.

10. Fast Foods

Everyone now knows that fast food is never a great idea for your waistline or your internal body. Don’t ruin your week with an attack by eating on the go, try to plan ahead for your work week and meals for the family so that this can be avoided. Eating at home can save you money and a trip to the doctor after eating some cheeseburgers while out and about.
